The Greatest Lemon Glaze

The perfect lemon glaze is hard to find--not too sweet, not too sour, not too powdery and not too thick--but this one comes close. Another plus--it's super simple and easy; only 4 ingredients. This glaze is sure to be a favourite. It would go great on a cake or on my zucchini lemon loaf, which I'll post about soon. As I said before, only 4 ingredients and only 4 steps:
  • Lemon juice
  • Powdered/Icing usgar
  • Salt
  • Milk
Even simpler then my Chocolate Icing recipe, which, if you're a chocolate lover (and let's admit it-who isn't) you should definitley check out. 
Now, the recipe:

The Greatest Lemon Glaze

Time: 10 minutes
Difficulty: Easy
Yield: 1 Cup

Ingredients
  • 3 Tablespoons lemon juice--you can use store bought but I prefer freshly squeezed
  • 1 1/2 Cup powdered sugar
  • 1/4 Teaspoon salt
  • 1 Tablespoon milk
To make:
  1. Juice lemons if using fresh ones.
  2. Measure lemon juice into a medium bowl and whisk in salt.
  3. Beat in sugar 1/2 cup at a time, alternating with a splash of your milk.
  4. Whisk vigorously to get rid of any lumps.
  5. Top a cake or loaf with your glaze and enjoy!*
*When storing, cover with a damp towel or cling wrap, and stir before using.

Mint Chip Dip Cookies

 Hands down, these are the best cookies ever.  Basically; they’re mint cookies, dipped in chocolate. Um, yes, yes, and YES PLEASE . These take some time, but are completely worth it.  Butter. Duh, every good cookies starts with a good chunk of butter, in this recipe we’ll use 1 cup of very soft salted butter. White sugar. Brown sugar. Eggs. Vanilla.
