Mini Chocolate Cupcakes

They’re mini. They’re chocolaty. They’re delicious!

This recipe I borrowed and adapted from ChelSweets (you can find her recipe here), so thanks to her for this awesome idea. 

I brought these to Youth group and let me tell you, they were a hit. Also I should’ve made a double batch, as I didn’t have any left to share with my family! In fact, I didn’t take a photo, but take my word for it, these are trés bien*, I can promise these will be a favourite, and keep you and your friends coming back for more!

Mini Chocolate Cupcakes



Time: 45-60 minutes

Difficulty: medium

Yield: 16-24 mini cupcakes


Ingredients

Cupcakes

  • 1/4 cup buttermilk (or milk with a dash of lemon juice or vinegar)
  • 2 tbsp semi-sweet chocolate chips
  • 1/4 cup all-purpose flour
  • 1/4 cup white sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 egg
  • 2 tbsp vegetable oil
  • 1/4 tsp of vinegar or lemon juice
  • 1/4 tsp of vanilla
Frosting
  • 1/4 cup very soft salted butter
  • 1/2 tsp vanilla extract
  • Aprox 3/4 cup powdered sugar (to taste)
  • 1/4 cup unsweetened cocoa powder
  • 2-3 tbsp whole milk
  • 1/4 cup melted semi-sweet chocolate chips, slightly cooled
To make:

Cupcakes
  1. Preheat oven to 350° F. Grease or line a mini muffin tin.
  2. Place chocolate chips and buttermilk in the microwave until the chips are melted. Use a fork or whisk to mix milk and chocolate together.
  3. In a medium bowl whisk together flour, sugar, cocoa powder, baking soda, and salt.
  4. Add milk-and-chocolate mixture to dry ingredients, and mix until combined.
  5. Stir in egg, oil, acid, and vanilla.
  6. Using a small cookie or ice cream scoop, filling each cup about 3/4 full.
  7. Bake for 9-10 minutes.
  8. Let cool!
Frosting
  1. Beat butter, and add in vanilla
  2. Slowly add in powdered sugar, cocoa powder.
  3. Mix in milk (start with 2 tbsp, and add in more if needed later)
  4. Beat in melted chocolate on high speed. Check your texture! If it’s too thick, add more milk, if it’s too thin, add more powdered sugar.
Assembly
  1. Pipe frosting onto cooled cupcakes.
  2. Add sprinkles (optional, but obviously recommended)
  3. Enjoy and share with friends. Or enjoy all on your own.

Mint Chip Dip Cookies

 Hands down, these are the best cookies ever.  Basically; they’re mint cookies, dipped in chocolate. Um, yes, yes, and YES PLEASE . These take some time, but are completely worth it.  Butter. Duh, every good cookies starts with a good chunk of butter, in this recipe we’ll use 1 cup of very soft salted butter. White sugar. Brown sugar. Eggs. Vanilla.
